Chilean Empanada
Ingredients
Butter1 tablespoon
Onion1 large
Garlic1 tsp minced
Dried Oregano1 tsp
Cumin1 tsp
Salt1/2 tsp
Black Pepper1/2 tsp
Ground Pork1 lb
Raisins1 cup
Black Olives1 cup
Eggs3 Large
Water1 cup
Shortening1 cup
All purpose flour5 Cups
Salt2 tsp
Eggs2 Beaten
🚐 Making this work in a van
- Anything baked can usually be done in a covered skillet on low heat. Watch it, and turn it once.
- Halve the recipe. Leftovers need refrigeration you may not have.
- Prep everything before you light the burner. Counter space disappears fast.
- Swap fresh herbs for dried, and fresh cream for evaporated milk in a tin.
